WONTON SOUP

Wontons are technically dumplings, very similar in fact to a sew mai. The two fillings are totally interchangeable. The little soup dumplings are also delicious by themselves without the broth. You can boil them up and serve them on a plate, slathered with some chili or soy for a great appetizer.

MAKES 24 WONTONS

Filling

1 lb (450 g) lean pork, coarsely ground

1 lb (450 g) shrimp, coarsely chopped

2 tbsp (30 ml) thin soy sauce

2 tbsp (30 ml) oyster sauce

Few drops sesame oil

2 tsp (10 ml) sherry

1 tsp sugar

1 green onion, minced

1 tsp cornstarch

Pinch salt

2 dashes white pepper

Soup

24 wonton wrappers

3 qt (2.8 L) water for boiling wontons

5 cups (1.2 L) Chinese Chicken Stock

3 scallions, thinly sliced

1 tsp sesame oil
